Balsamic Pork

So in case you're wondering what ever happened to the other pork tenderloin from when I made stir fry... 
I made this!


It's quite easy actually.  Grab a gallon size zip-lock bag.  Place the pork tenderloin in it.  I usually never measure the ingredients for this.  Just pour in some olive oil, balsamic vinegar, thyme, garlic, and pepper.  You need just enough oil and vinegar to coat the meat.  The rest is all added to your liking.


Place it in the refrigerator for at least 4 hours but preferably overnight.

When it's done marinating, preheat the oven to 475 degrees.  Take the meat out of the bag and place into a baking dish (you may want to use a little nonstick cooking spray).  Bake for 25-30 minutes or until a meat thermometer reads 160-170 and meat is no longer pink.
This is really quick and easy to make.  I like that it's all ready to go after marinating.  Just toss it in the oven and 30 minutes later you have a meal.
