Black Bean Brownies

This recipe is amazing!  Trust me.  I was very curious after seeing HappyHerbivore's recipe posted on Facebook.  I just had to try it!  I changed up the recipe slightly and added a little extra cocoa, oats, and did use a little raw sugar (not the full 1/4 though- more like 1/8).  I also used 1 tsp. of cinnamon instead of H.H.'s 1 TBSP.

Here are the ingredients you will need:  
 
Optional raw sugar.
   Rinse the beans well.

 Throw all ingredients into a food processor. 


 Process until you get a smooth texture.  At this point I'm already drooling!


For one batch, a greased 9-inch pie plate worked terrific!  Put in oven for 30 minutes or until a toothpick inserted comes out clean.


 And here you have it, the finished product!


 Just look at the moist, chocolate, gooey inside! 


This recipe is easily tweaked to your liking.  My family thought they were too chocolatey, but I didn't think so.  I can always cut down on the chocolate next time I make them, or add in some other ingredients as well such as nuts, seeds, or protein powder.  The banana does add a fruity sweetness.  They actually taste like banana bread.  Love these!  Thank you HappyHerbivore

Black Bean Brownies
Serves 8
  • 1 can (15 oz.) of black beans, rinsed and drained
  • 2 bananas
  • 1/3 cup Agave Nectar
  • 1/3 cup Unsweetened Cocoa
  • 1/3 cup Quick Oats
  • 2 tsp. Vanilla
  • 1 tsp. Cinnamon
  • 1/8 cup Raw Sugar (optional)
Preheat oven to 350° and grease a 9-inch pie plate or an 8x8 pan.
Throw all ingredients in a food processor or blender and process until smooth.  Pour into greased pan and bake for about 30 minutes or until a toothpick inserted comes out clean.

Need to serve more people?  I have easily doubled this recipe and put the batter into a 9x13 inch pan.
