I placed them in a 475 degree oven for about 35 minutes. They turned out great!
Tired of eating raw vegetables all the time? Roasting is an easy way to change things up. It brings out so much flavor and sweetness! I had so many vegetables I didn't know what to do with, so I chopped up squash, peppers (red, yellow, and orange), carrots, potatoes, leeks, and mushrooms. Then I put them in a large bowl and stirred in 1/2 cup of olive oil, balsamic vinegar, and some seasonings.
